I know what you are thinking, it is one of two possible thoughts....1. Oh my god, that sounds disgusting, or 2. Bacon really goes with everything....
Last weekend we were planning a menu to eat while watching football. And my daughter Alli asked if I was going to use the peanut butter chips she had bought for anything....I offered to make peanut butter cookies with them, "Yum, that sounds great" is the response I got.
So as I was making them, I remembered the menu planning and Alli mentioned that she wanted everything with bacon, bacon wrapped hot dogs, potato skins with bacon, you get the picture.
On a plate was a few pieces of bacon left from the other recipes, so I decided to make part of this batch of cookies with bacon added...come on now, "Bacon makes everything taste better"....what the heck, lets try it.
So in a small batch of a dozen, I mixed in 3 pieces of cooked bacon that had been chopped. It actually pretty good and worthy of anyone that enjoys bacon, (ok, that's most of the US and all of Canada).
Now my peanut butter cookie recipe is delicious on its own, but adding bacon, just raised the bar...
Try it for yourself:
Ingredients:
1 Stick butter (room temperature)
1/4 cup crunchy peanut butter
1/4 cup smooth (your choice here, on which or both to use, I like to mix the two)
3/4 cup Sugar
3/4 cup Light Brown Sugar
2 eggs
1 1/2 tsp Vanilla extract
1 tsp salt
1 tsp baking soda (yellow box)
1 cup of oats
2 cups all purpose flour
1 bag Peanut Butter Chips
9 pieces of cooked and chopped or crumbled bacon (optional)
Now, like everything I make, I try to use the fewest bowls in the process. I use to mix the dry ingredients in one and the wet in another, but found it made no difference in the texture or final product so here is goes.
In a bowl (or the bowl of a stand mixer) Cream the butter, peanut butter and sugars together (brown and white).
Once well mixed and smooth add the eggs and mix well until smooth and creamy looking
Add the vanilla extract and stir a few times to incorporate
Add the oats and stir some more
Now add the salt and baking soda and stir well
Add the flour 1/2 a cup at a time and mix while adding
Finally add the peanut butter chips and bacon then incorporate
Pre-heat the oven to 350 degrees
Take a cookie sheet and a small scoop or tablespoon
Scoop out rounded tablespoons of the batter and roll them into balls. Place on the cookie sheet approximately 2 inches apart. Press down the balls to flatten out to 1/4 of an inch
Bake in over at 350 for 10-12 minutes
Leave on pan for 3-4 minutes then remove to a wire cooling rack
That's it, enjoy!
