I have a daughter, Alli, that just loves everything hot and spicy. She has had me make her Hot and Spicy pickles, Jalapeno Cheddar Bagels, and today it was Srirach popcorn....Now, I can admit that I am not a hot and spicy lover, but I know that Alli is, so I am always up for a challenge to please her pallet.
Step 1, search the internet for as many recipes as I can find...
I guess I am not that surprised at how many different recipes I found in my search. You should try it....there are tons.
step 2, try the one that seems best....
So I found 2 that seemed to be really good, the first one you actually mix the sauce with the oil and cook in the popper...Let me tell you that to me, it was a failure as the bottom of the pot burned as we ended up with little burn particles throughout...although I was informed by the Spice Expert that the flavor seems pretty good.
After discussing the flavor and what was missing, I went to option 2
http://www.bakeyourday.net/sriracha-sesame-ginger-popcorn/ This one was more like adding butter to the popcorn, which I felt was a stronger recipe....the flavors were good, but the popcorn turned a little soggy like when you over butter....soooooooo
step 3, reinvent it...
I used the basic premise of the bakeyourday recipe, but made some changes...so here you go
First you need to pop some popcorn, 4 or more cups. I use a Nostalgia popper or a High Temp popper on the stove with just a little canola or coconut oil (La Tourangelle Organic Coconut Oil (Google Affiliate Ad)) but I am sure that microwave or air popped would work fine.
Put the popcorn in a large bowl or paper bag and prepare the sauce:
2-3 TBL butter
1 TBL oilive oil
4-5 TBL Sriracha Sauce
1/4 tsp salt
1/2 tsp ginger powder
1/2 tsp garlic powder
2 tsp Rice Wine Vinegar
1/2 tsp Honey (Optional)
Place ingredients in a saucepan on low to medium heat and stir until the butter has melted and everything is incorporated.
Once complete, drizzle a little at time over the popcorn and toss well...keep adding a drizzle at a time and toss until coated they way you want it....The reason to drizzle a little at a time is to ensure that you are not turning all of it into a soggy mess...This will be like pouring butter at a movie theater...you have to mix it well with dry popcorn to evenly distribute to a wonderful taste.
I know Alli and my wife Michelle loved it, I hope you do too!
