Turkey Hash-The Ultimate Leftover Treat



Do you remember a couple weeks ago watching one of the 12 showings on TBS of the The Christmas Story? Admit it, you watched it all the way through once, then 3 more times you watched bits and pieces. I did too.

I remember watching it years ago when it first came out and there is a scene towards the end where the neighbors dogs barge in and steal the turkey. You hear the "adult" Ralphie narrating about how there will be no turkey sandwiches, no turkey soup and no turkey hash. This made an old man cry.....

But in seeing and hearing this, it gave me the idea of developing my own turkey hash....Now for the holidays we go out of our way to purchase an extra large turkey so that we can make hash. In simple terms hash, is just chopped up meat and potatoes, but my turkey hash is something more.

Ingredients:

Turkey (cooked) - Yes, you need cooked turkey, you can use leftovers or when the mood is set, the grocery store does rotisserie turkey and chicken...these are usually just the breast which works perfectly.

Bacon (Cooked) - I tend to stick with near equal amounts of turkey and bacon, so figure 1 lb of both

Potatoes - 6 Russets or 10 Red New, diced so that each cut is about 1/4-1/2 inch. Smaller is better

Bell Pepper - 1 diced

Onion - 1 diced

Seasonings -
Salt, Pepper, Garlic Powder, Seasoning Salt and smokey paprika

Step 1 - Potato Prep
Dice the Potatoes and place them in a pot of cold water seasoned with some salt and garlic powder (a tsp of each will do)

Place on the stove on a medium heat and cook until just before boiling

Remove from heat and rinse to cool.

Place on the side for later use

Step 2 - Bacon prep
Assuming the bacon is not cooked yet, toss it in a pan with a little canola oil and cook until just before crisp.

Remove from pan to a bowl and reserve 1/2 the bacon fat

Step 3 - The Turkey

Dice up the cooked turkey into 1/4-1/2 inch pieces and place in the pan from the bacon with the reserved bacon fat on medium heat. Season lightly with all of the seasonings identified.

Cook until the turkey starts to brown...this makes is crisp and caramel-ly and delicious.

Remove to the bowl with the bacon

Step 4 - Hash time

In the same pan, add a little canola oil then the onion and pepper

Season lightly with seasons above.

Add a pad of butter (1 TBL) and then the potatoes and cook on a medium high heat tossing lightly every few minutes.

Season again

After approx. 10 minutes add the turkey and bacon and toss together.

Allow to cook for approx. 10 minutes then toss/turn and cook for another 10 minutes.

You will repeat this step until the hash to to the done-ness you want.

Optionally, you can remove smaller portions and fry on a high heat for a couple minutes to crisp up.

Serve and enjoy by it self with eggs, however you like it.
